Instructions:
Wash the bell peppers and then chop them.
Peel the potatoes and then slice them thin.
Peel and chop the shallot as well and then fry it in a pan, in olive oil, until tender.
Next, add the vegetable broth into the pan and then add the potato slices.
Cook the potatoes for about 5 minutes and then add the bell peppers as well.
Cook everything for about 10 minutes and add salt and pepper to taste.
Meanwhile, beat the eggs with a pinch of salt and pepper and thyme.
Pour the egg mixture over the vegetables and then cook the frittata for 10 minutes on one side.
Turn the frittata over and cook on the other side for 2-3 minutes and then serve while still warm.
